Naspati Chatni

a fresh chutney of pear, date and pecan nuts

A vegan meal only gets better with richly flavored side dishes, such as fresh made chutneys with medicinal herbs. 

This is what you need:

1 spoon finely chopped or rasped ginger
½ spoon rasped orange peel (organic only!!)
¼ teaspoon grinded cardamon seeds 
1 cinnamon stick 
2 spoons of ghee or coconut oil
½ cup (120 ml.) freshly squeezed orange juice 
¼ teaspoon Cayenne pepper
¼ cup (40 gr.) rice sirup or palm sugar
6-7 solid pears  (Doyenne de Comice) peeled in pieces
½ cup (95 gr.) fresh pitted dates, cut in 1 cm pieces
1/3 cup (40 gr.) pecan nuts, roasted and crumbled

And this is how you do it!

Heat the ginger, orange peel, cardamom seed and cinnamon on low fire and bake them until you can smell the gorgeous aroma’s. Add the orange juice, cayenne pepper and rice sirop and stir. Add the pears and leave it on low fire for about half an hour. Let it cool down and add the dates and pecan nuts. So yummie <3
